Turkey Mince & Spinach Omelette

This simple recipe contains very low carbs and is a good stomach filler for those with big appetities.

  • Ingredients
    • 500g Turkey mince (leg or breast)
    • 150g chopped spinach (fresh or frozen), use more as desired
    • 8-10 eggs
  • Optional
    • Oil for cooking (olive oil is best), though may not be needed depending on the fat content of your mince
    • Salt
    • More vegetables (e.g. red pepper)
    • Cheese*

Instructions

  1. Gently cook the turkey mince in a deep frying pan until lightly cooked
  2. Mix the eggs and spinach together in a bowl and pour over the mince
  3. Add any optional ingredients
  4. Gently cook into an omelette

Alternatively, cook the eggs into a plain omelette, and cook the turkey mince and vegetables separately, and then serve the mix folded into the omelette.
