Cauliflower Bake

This simple recipe contains very low carbs and is a good stomach filler for those with big appetities.

  • Ingredients
    • 1 Cauliflower
    • 10 eggs
    • 250ml whole cream*
    • 2 sausages*
    • 250g bacon
    • (Sausage / Bacon can also be replaced with more healthy options, e.g. chicken breast)
  • Optional
    • Salt
    • Herbs
    • Cheese*

Instructions:

  1. Preheat your oven to 180 C / 355 F
  2. Chop the cauliflower into small pieces and boil until slightly soft (~20-30 mins)
  3. Drain the cauliflower well and leave to cool, you want most of the excess moisture to steam off
  4. Slice the sausage into small bite-sized slices and spread evenly across a ceramic or metal oven-proof dish (a lasagne dish is ideal)
  5. Chop the bacon into small cubes and spread evenly over the sausage
  6. Spread the cauliflower evenly over the top of the bacon
  7. Mix the eggs up in a bowl, add any salt or herbs or cheese as desired, and pour over the top of the caulifower so it fills in all the gaps
  8. Bake in the middle of the oven for 1 hour or until lightly golden brown
  9. Slice into 6 portions and serve with a side salad

*Sausages, cream and cheese may contain some saccharides depending on brand selected, so check the packaging and calculate accordingly.
