This simple recipe contains very low carbs and is a good stomach filler for those with big appetities.
- Ingredients
- 1 Cauliflower
- 10 eggs
- 250ml whole cream*
- 2 sausages*
- 250g bacon
- (Sausage / Bacon can also be replaced with more healthy options, e.g. chicken breast)
- Optional
- Salt
- Herbs
- Cheese*
Instructions:
- Preheat your oven to 180 C / 355 F
- Chop the cauliflower into small pieces and boil until slightly soft (~20-30 mins)
- Drain the cauliflower well and leave to cool, you want most of the excess moisture to steam off
- Slice the sausage into small bite-sized slices and spread evenly across a ceramic or metal oven-proof dish (a lasagne dish is ideal)
- Chop the bacon into small cubes and spread evenly over the sausage
- Spread the cauliflower evenly over the top of the bacon
- Mix the eggs up in a bowl, add any salt or herbs or cheese as desired, and pour over the top of the caulifower so it fills in all the gaps
- Bake in the middle of the oven for 1 hour or until lightly golden brown
- Slice into 6 portions and serve with a side salad
*Sausages, cream and cheese may contain some saccharides depending on brand selected, so check the packaging and calculate accordingly.
